Can you put multiple companies on Sage Instant Accounting 
No but yeah but no.
Sage do not sell a multi company version.
It is perfectly within the terms of your sage licence to backup and restore different sets of data for multiple different companies.
Backing up and restoring is slow and time consuming.
There have been some special "deals" on upgrading Instant to Line 50 Multi company recently.
