Hi

Can I group customers on Sage 50 so I can categorise them by customer type and run a report on sales by different customer groups??

Yes,

You use searches to filter down your view of customers and then run reports against that view.

These can be saved and reused.

The same applies in all other modules, products, suppliers, invoices etc.
