How to use Sales Order entry for a service business

Trying to make to order entry more user friendly, is there a way to by pass allocate stock/despatch order processing, we are a membership organization that have no stock. Any help would be appreciated.

Why are you using SOP?

Why not use Invoicing then you don't have to allocate or despatch?
