I would like a Top Customer By Profit report. Which existing report in Accountant Plus 2007 would be the best one to modify if this process is at all possible?

You need to clearly define what the report needs to show.
I think because you will want to sort by the results of a calculation, the sage report designer is not going to be up to the task.
I would link the data into excel and use a pivot table to display the report
