use my own order/ quote num

when creating a quote in sage that i then turn into an invoice is it possible to use my own order num instead of the one sage gives
VAT legislation requires that invoice numbers be sequential and not be random.
No order number is actual involved if you convert Quoted to Invoices so perhaps you could clarify
